This recipe is one of those old and faithful ones – you might even know it already. Although it’s not going to win a prize in the health category, it’s a treat for young and old.
INGREDIENTS
- 250 g of real butter
- 500 g of icing sugar
- Pinch of salt
- 30 ml cocoa powder
- 2 eggs
- 5 ml vanilla essence
- five packets of mini Marie Biscuits (a type of tea biscuit in South Africa), uncrushed (as in image), or one packet of regular Marie biscuits, crushed into smaller pieces
- Chocolate vermicelli and raspberries (optional toppings)
INSTRUCTIONS
- Grease a flat dish with butter or line it with baking paper.
- Melt the butter in a medium-sized saucepan or pot.
- In a separate bowl, sift the icing sugar, salt and cocoa together.
- Take the melted butter off the heat and mix in the sugary mix little by little until a stiff chocolate mixture forms.
- In another bowl, beat the eggs and add a little bit of the warm butter mixture to the eggs and mix it well to prevent it from curdling. Add the mixture to the chocolate and stir well until you have a silky chocolate mix.
- Put the mixture back on a low heat and stir continuously until it thickens.
- Remove from the stove before adding the vanilla essence.
- Add the Marie biscuits (small and uncrushed or large and crushed) to the chocolate mixture and stir until cookies are completely covered in chocolate.
- Spoon the mixture into the greased or lined pan and make sure that the surface is flat and evenly spread.
- Place the dish into a fridge and let it cool down.
- Once cool, cut into squares and it is ready to serve.
